30 ml Black Taffel Aquavit
20 ml White Creme de Cacao
20 ml Lemon Juice
10 ml Sugar Syrup
5 grams Chilli
1 separated egg white
20 ml Sparkling water
Garnish with a Teaspoon of cacao nibs

1. Slice the chili into thin slices, and freshly squeeze 20 ml of lemon juice.
2. Combine the ingredients in a shaker, but save the cacao nibs for garnish.
3. Close the shaker. Shake the mixture without ice cubes, for ten seconds.
4. Open the shaker. The mixture should look like a thick foam with small bubbles. Fill the shaker with ice.
5. Close the shaker. Shake for ten seconds, to chill, dilute and aerate the cocktail.
6. Open the shaker. Strain the drink into the stemmed glass without ice.
7. Add sparkling water.
8. Garnish by sprinkling a teaspoon of cacao nibs on the top.

Slice the chili into thin slices. Cut a lemon in half. Combine chocolate liqueur and Black Taffel Aquavit in a shaker. Add the chili slices and the lemon's juice. We recommend purchasing a handheld citrus squeezer. Add the simple syrup and a fresh egg white. Shake the mixture first without ice cubes for ten seconds, to froth the egg white into the drink. A vertical shake of ten seconds is most effective. Separate the shaker. The mixture should look like a thick foam with small bubbles. Add ice. Close the shaker, and shake for ten seconds again to chill and dilute the cocktail. Separate the shaker. Strain the drink into the stemmed glass. Top with cacao nibs.
