The Paloma is a great example of the little things that make big changes in a Highball. At its core, it is tequila and grapefruit soda, with a salt rim. Often you'll see it shaken with lime and fresh grapefruit, looking more like a grapefruit tequila collins, but we stay with the classic here. Play with the tequila, try different sodas, and see what happens if you omit the salt.


  • Highball glass
  • Measuring Cup / Jigger
  • Bar spoon


  • 5 cl tequila
  • 12 cl quality grapefruit soda
  • Salt
  • Lime wedge
  1. Wet the rim of a highball with lime juice
  2. Dip the wet glass in salt
  3. Fill the highball with ice
  4. Pour 5 cl tequila
  5. Top with quality grapefruit soda
  6. Garnish with a lime wedge
