Winter is here, hopefully not to stay, but until the sun returns we arehappy and proud to present our winter menu. Classic cocktails have been dragged from the cupboards, dusted off, and then beat up in a back alley with a billy club of environmental responsibility. The intention has been to limit our footprint as much as possible, and we are damned proud of how far we have come. Upcycled lemon cordials, home made vermouth and cherries, bitters with left-overs from production and much more. That’s why we call it Don’t Get Wasted (#alsodrinkresponibly)

Cocktail of the Month

ROSE PUNCH

Dried roses, berry tea, pink port wine, rhubarbs, and aquavit make up this low-ABV cup of summer. Sweet and fruity while still light and luxurious. Punch is an art form predating cocktails and highballs by at least a century. Tea, fortified wines, spirits and sugar infused with oils of fruits. We actually think we make it very well. This mix is made with teas, pink port, dill and the last rhubarb of the year. Garnished with fruit in season. It’s light, thirst quenching and super delish.

The lemons from the production of our Bay Leaf Gin are fulll of juice. We transform this juice to a cordial that’ll last us through the long harsh winter on a longboat to England. A hard shake with an abundance of Bay Leaf Gin. Rinse and repeat.
