From roastery to bakery - We visited the Copenhagen Coffee Lab to learn more about our partners in our Coffee Spirit collaboration. 

In an old industrial district in southern Copenhagen, between warehouses and machine halls, you find the heart of Copenhagen Coffee Lab – the simultaneously high-tech and hand-held roastery. Even before turning the corner of the building, you are greeted by the unmistakable sent of freshly roasted coffee beans flowing from the open storage gate.

Inside, the roastery is buzzing with life. Today's roasting is over, so now bags of coffee beans are being packed, weighed, sealed, and sorted into boxes. At the same time, meetings are held in the offices on the 1st floor, while one of the employees goes through the process with a group of guests who are visiting for a tasting.

We are greeted by Allan Nielsen, who is one of the founders of Copenhagen Coffee Lab. Together with three other coffee enthusiasts, Allan started a small roastery in a garage on Amager back in 2013. However, interest in the company grew rapidly, and to meet the growing demand from restaurants, it was necessary to upgrade to larger premises already in 2015.

The small roastery quickly grew larger, and little by little, Copenhagen Coffee Lab also began to open cafés. To begin with, however, it was only abroad. It started in Lisbon, but today the chain of cafés can be found in Germany, Portugal, and France spread across 37 locations as well as a single café on Strandlodsvej on Amager. However, this will soon be joined by another 2 cafés in Copenhagen.

“Copenhagen Coffee Lab is sort of split in two. Abroad, we are a chain of coffee shops and bakeries, while in Denmark we are primarily a coffee supplier to both individuals and companies. So, it can be a little difficult to say exactly what Copenhagen Coffee Lab is, as we are so many different things at once.”

One thing can be said about Copenhagen Coffee Lab, however, and that is that innovation, flavour and quality are always in focus.

“Making the best coffee in the world is not just about making the best roast. There are many different steps in the process, all of which have an impact on the final product. Everything from the composition of the soil, the ripeness of the beans at harvest and the size of the selected beans plays a role.”

Allan and co. have themselves traveled around the world to select the right coffee farms, just as they have also trained the coffee farmers in how the beans should be selected and harvested to achieve the highest quality. And then the roasting itself is of course also fully optimized: At the end of 2021, the roastery moved into their current premises, where a brand-new coffee roaster was also taken into use. The special machine enables a much more controlled and gentle roasting, which allows Allan and the other roasters to hit the exact right roast - every time.

"The goal is of course to make really good coffee, but also to explore the diversity of expressions that can be achieved by optimizing and adjusting each step in the process."

This attention to details and desire to explore and push boundaries, resonates completely with the approach we at Copenhagen Distillery have to our field. This kinship between our two companies also made it obvious for us to make the collaboration on the entirely unique Coffee Spirit.

“For us, Coffee Spirit is an exciting experiment. It's yet another way of exploring the range and versatility of what coffee can be. Being able to preserve such a complex and authentic coffee expression in a spirit is completely unique.”

The coffee used for Coffee Spirit comes from the organic farm Finca Ceylan in Guatemala, which Copenhagen Coffee Lab has been working with from the very beginning. The beans are of the variety Bourbon Arabica, which in a medium espresso roast expresses classic notes of vanilla and chocolate with an elegant touch of citrus and exotic fruits.

"You can say that it is sort of our signature coffee. It's just a super delicious all-round coffee.”

Copenhagen Coffee Lab's expertise made it possible for us to nail the aromas we were chasing for our new and very unique Copenhagen Coffee Spirit. So from us, a loud 'Thanks for the coffee!'.
