RARE Harvey Nichols
This edition follows the RARE philosophy. It is our space to experiment and push technique. The whisky rested in small 50 litre ex-aquavit casks for most of its maturation. Those casks, a result of our production of a bespoke aquavit for the famous Copenhagen restaurant Møntergade, carried layers of lemony caraway, fennel and fresh nordic spice. The aquavit casks shape the spirit gently. Not overpowering, but present.
In 2023, The casks were married in a virgin oak cask. All our casks are made from Quercus frainetto, also known as Hungarian oak. The wood is tight grained and structured. It brings grip, depth and quiet spice. The result is a whisky that moves between Nordic herbal notes and firm oak structure, without losing balance.
On the nose you’ll find notes of distilled caraway, fennel, sweet citrus, honey, grain, and oak. On the palate it opens with flavours of Scandinavian caraway and light hints of anise, then moves into dried papaya, and green leaves that gently merge with vanilla, white pepper and cloves.
The whisky finishes in Oak tannins, heather honey, cedar tree, and leather.
Like all RARE editions, this is a limited release. Once these bottles are gone, they are gone.
