At Copenhagen Distillery, this philosophy shapes everything we do. Driven by passion and excellence, we craft 100% organic Whisky, Gin and Aquavit. Every drop we make is part of a circular system. The spent grain from our production of ultra premium whisky is repurposed as organic animal feed, while the fruit and herbs used in our botanical spirits such as gin and aquavit never go to waste. As we like to say, “Upcycled lemons from our production” are not just a story of sustainability, they are part of the taste itself.
The same
principle guides our whisky production. Once the sugars have been extracted
from our organic Danish barley, the spent grain becomes nutritious animal feed
in partnership with local farmers. Nothing leaves the distillery unused. What
starts in the field returns to it, completing a loop that feels both timeless
and modern.
This
mindset reflects a wider Danish approach. According to Invest in Denmark, the
nation’s food production “balances economic viability with ecological and
social considerations” . National projects such as Food
Upcycling, supported by the Danish Industry Foundation, help companies turn
by-products into valuable raw materials, reducing food waste and carbon
emissions across the value chain.
