Did it evolve as a variation on a collins, or as a sour/daisy hybrid? Probably a bit of both. The stories are many, but around 1900 it consolidates as a gin sour with egg whites and sparkling water. no matter the origin, it's delightful and delicious.

- Highball or fizz glass
- Strainer
Ingredients
- 6 cl Angelica gin
- 3 cl lemon juice
- 1½ cl simple syrup
- ½ egg white
- 6 cl Angelica gin into a glass
- Add 3 cl lemon juice
- Add ½ egg white
- Shake without ice
- Shake again with ice
- Strain into a highball glass full of ice
- Top up with sparkling water
- Garnish with lemon
