Did it evolve as a variation on a collins, or as a sour/daisy hybrid? Probably a bit of both. The stories are many, but around 1900 it consolidates as a gin sour with egg whites and sparkling water. no matter the origin, it's delightful and delicious.

  • Shaker
  • Jigger
  • Highball or fizz glass
  • Strainer

Ingredients

  • 6 cl Angelica gin
  • 3 cl lemon juice
  • 1½ cl simple syrup
  • ½ egg white
  1. 6 cl Angelica gin into a glass
  2. Add 3 cl lemon juice
  3. Add ½ egg white
  4. Shake without ice
  5. Shake again with ice
  6. Strain into a highball glass full of ice
  7. Top up with sparkling water
  8. Garnish with lemon
