Through a process of rigorous experimentation and perfection, we craft our various types of Copenhagen Distillery Gin to be exceptionally unique and pleasantly surprising to the palate. From the introduction of our award-winning Orange Gin in 2016 to our most recent Bay Leaf Gin, we always look to challenge the conventions of how gins are crafted. Copenhagen is a city that is known for its design, and our Copenhagen Gins follow in that philosophy—both in taste and aesthetic. Whether it’s by experimenting with new flavours or removing extraneous ones, we want all of our Copenhagen Gins to be instantly recognisable and 100% memorable.
Our limited editions are distilled because of our curiosity of what’s possible. Most of them never make it to the bottle, but those who do, are definitely worth the taste.
Depending on the aquavit brand, or the region in Scandinavia, the spelling can be different. The designation is a semantic one, however, the legislation around making aquavit is the same across the board. Aquavit is essentially alcohol flavoured with a distillate of dill seed and/or caraway, and then maybe cask matured. It’s beyond this point where aquavit brands start to distinguish themselves. It’s at this point where we let loose and rethink traditions. With our aquavit bringing into being the following collection of unique and fantastic spirits.
For our Mexican Coffee Liqueur, we use organic Mexican coffee beans from two different roasts: a very light roast that lends a higher acidity, and a medium-dark roast that catches slightly bitter coffee notes. We combined the coffee distillate with cane sugar, green anise and a touch of grated organic lemon peel that adds a richer experience to any coffee liqueur drink.
Scandinavian and British traditions unite in elegant Danish drinking. Nordic caraway and dill plucked from aquavit, augment silken juniper with fresh likenesses of lemon, lime and mint. Pink pepper’s fresh sparkle, angelica’s velvet texture and broad, complex turmeric finish the bracing gin’s balance—a refreshing water of life, from both sides of the water.

Inspired by the classic, early 20th-century orange gin. Instead of mimicking the gin of the past, we built on the tradition by using a mix of both sweet and bitter oranges. Combined with sweet prune, spicy longpepper, cardamom and juniper for a rich body, our Orange Gin is a unique spin on a classic spirit.
Made to celebrate our certification as an organic producer, this is a London Dry Gin to turn heads. Dark notes from bay leaf and angelica and sweetness from cranberries. The gin is unfiltered and may turn cloudy with the addition of water or ice.
Borrowing from the process used to develop single malt whiskey, we rest our Oak Gin in small sherry oak casks to allow the combination of juniper, orange peel, and pepper to establish a unique, smooth and balanced flavour. Oak Gin was voted ”The best casked gin 2017” by Gin Masters.
Copenhagen Distillery’s very first batch in the RAW category is a whisky made from both triple and double distilled barley malt, which are the pinnacle of the work of two master distillers.
The whisky has been matured in 100L virgin casks uniquely created for the distillery. The casks are made from Hungarian Oak and are medium toasted. The whisky is made from the highest quality local malts, and has a clean, crisp expression that comes from meticulous distillation processes and virgin casks.
It is remarkably rich in flavour with a fresh floral nose followed by a highly malted and peppery palette accompanied by subtle earthy notes.
The whisky is bottled in cask strength: 61.1% ABV.
This Single Malted Emmer whisky is the first release in the RARE category and is limited to only 36 bottles. The whisky is double distilled and matured in 50L medium toasted virgin cask of European Red Oak.
The whisky is made from 100% organically grown Danish emmer of the highest quality. Emmer is an overseen ancient grain, which is remarkably rich in flavour and gives complex notes of honey, warm spices, and lime peel.
The whisky is bottled at 53.1% ABV.

Custom bottlings of approximately five to fifteen centilitres and twenty to thirtyfive centilitres, depending on each hand-crafted flask's size. Priced per amount and available to members of our Whisky Club. Only one hundred bottles will be filled, and may be collected personally at the distillery.
